Spicy N’Duja (Sobrasada)

Creamy N’Duja Spaghetti – serves 4

Originating in Calabria, Italy, N’Duja is a spicy, spreadable salami.

This simple supper or light lunch dish is the perfect 20 minute meal; creamy, spicy, cheesy – it’s comfort food at its best!

Ingredients

280g dried Spaghetti, cooked to your liking

150g whole cherry plum tomatoes (fresh or tinned)

1tbs garlic oil

2 small shallots finely diced

1 tsp dried parsley or fresh chopped parsley

60g Spicy N’Duja

130ml double cream

seasoning to taste

Pecorino or Parmesan to serve

 

 

Method

Fry the N’Duja, shallots and parsley in the garlic oil for a couple of minute until beginning to soften, use a wooden spoon to break down the N’Duja, allowing it release all its delicious, spicy oils.

Once it has melted down add the tomatoes, cover and simmer for five minutes

Pour in the cream and allow to gently bubble and thicken slightly

Taste and season

Add the cooked spaghetti

Serve with a generous sprinkle of freshly grated Pecorino or Parmesan and a good grind of black pepper.
